Failed beef plant's contractor dodges prison while helping authorities

Carothers was scheduled to report to a federal prison on November 5, but will now remain free until at least December 3. Officials need Carothers 'to interpret and analyse financial documents that are materially involved in the case relating to other potential targets of the investigation,' according to court documents.&rtreturn;Carothers has paid Mississippi taxpayers $250,000 for his role in the plant's failure, which cost the state more than $55 million when it closed in 2004 after just three months of operation.
